Chicken and veggie Breakfast Muffins

Recipe Ingredients for Chicken and Veggie Breakfast Muffins

5 eggs
170 g chicken breast (cooked and shredded)
1/2 medium onion diced
2 oz broccoli (diced)
2 tbsp non-fat milk
1 tbsp extra virgin olive oil (to saute veggies)
3 oz swiss cheese

Recipe Directions for Chicken and Veggie Breakfast Muffins

  1. Preheat oven to 350.

  2. Boil chicken and once cooled, shred.

  3. In a large skillet, add olive oil and saute onion, broccoli, and shredded chicken. Sauee until tender.

  4. In a large mixing bowl stir together eggs, milk, and sauteed mixture and spoon evenly into muffin pan sprayed with non-stick cooking spray or lined with muffin papers.

  5. Sprinkle cheese on the top of each muffin.

  6. Bake for 20-25 minutes or until firm throughout.
