Recipe Ingredients for Chicken-Veggie Barley Soup

64 oz Chicken Broth
14 1/2 oz diced tomatoes
425 g Hot Chili Beans in Spicy Chili Sauce
15 oz Pinto Beans Canned
6 oz Quick Barley
3 tbsp Benefiber
1 1/2 pounds boneless, skinless chicken breast
1 medium onion
1 medium zucchini
5 oz fresh spinach
1 pepper jalapeno
20 oz fresh tomato juice
32 oz water
14 oz fresh corn
10 oz fresh mushrooms
3 stalks celery

Recipe Directions for Chicken-Veggie Barley Soup

Dice chix, chop onion. Cook on med heat. Add broth, tomato juice & water. Chop remaining veggies & add to pot. Add diced tomatoes. Simmer for about 1 hour or till veggies get crisp-tender. Add 15oz can chili beans & add quick cook barley. Simmer 10 more minutes. Serve &/or freeze.
