A basic chicken pasta recipe with squash substituted for pasta, for added vitamins and reduced calories.

Recipe Ingredients for Chicken & Vegetables with Squash

1 tbsp. canola oil
1 red onion, chopped
1 tsp. Italian seasoning
1/2 tsp. black pepper
1 tbsp. roasted garlic
3/4 lb chicken breast, cut into strips
1 bell pepper, chopped
1 hot pepper, minced
1 zucchini, sliced
1 eggplant, sliced
8 oz. sliced mushrooms
8 oz. asparagus, chopped
3 cups baby spinach
24 oz. pasta sauce
6 oz. tomato juice
4 cups acorn squash

Recipe Directions for Chicken & Vegetables with Squash

  1. Put a large pot on medium-high heat.

  2. Add the canola oil to the pot.

  3. When the oil is hot, add the onion, garlic, and chicken, and stir.

  4. Sprinkle on the seasonings.

  5. When the chicken is browned, add the peppers, zucchini, eggplant, mushrooms, spinach, and asparagus.

  6. Stir and cook until the vegetables are tender and the spinach is wilted.

  7. Add the pasta sauce and stir.

  8. Pour the V8 into the pasta sauce jar and shake it, to loosen the remaining sauce. Then pour jar contents into the pot.

  9. Let simmer for at least 5 minutes, then serve over squash.

  10. For the squash: Put a large pot on high heat with about 1 inch of water in the bottom, and a vegetable steamer inside it.

  11. Cut 2 acorn squash into 4 pieces each.

  12. When the water is boiling, add the squash and cover.

  13. Allow to steam until squash flesh is tender, at least 20 minutes. When the squash is done, it should come off the rind easily with a fork.

  14. Season as desired and serve under the chicken & vegetable mixture.
