Chicken, Peppers, Zuccini, Mushrooms, Red Onions & Soy Sauce

Recipe Ingredients for Chicken Vegetables

350 grams Chicken
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
150 grams Squash, Summer, Zucchini, Includes Skin
7 medium Mushrooms
60 grams Red Onion
2 tbsp Soy Sauce

Recipe Directions for Chicken Vegetables

  1. Chop veggies and grill in a non stick skillet, if neccessary add some water and let simmer. Don't overdue it - 5 mins is plenty of time. Place on a plate.

  2. In the meantime cut chicken in small pieces, fry in a non stick pan, when cooked decrease the heat, add veggies, soy sauce (can replace with teriyaki) and simmer for 2-3 minutes.

  3. Serve with wild/brown rice on a side.
