Recipe Ingredients for Chicken and Vegetables in Peanut Sauce

16 tbsp Tomato Paste
504 grams Fresh Boneless Skinless Chicken Breasts
16 tbsp Chunky Natural Peanut Butter
1 tbsp Vegetable Oil, Canola
2 clove Garlic
1 medium (2-1/2" dia) Onions
1/2 head, medium (about 5-3/4" dia) Cabbage
1 medium Squash, Summer, All Varieties
1 cup Chicken Broth

Recipe Directions for Chicken and Vegetables in Peanut Sauce

Cut chicken and vegetables into bite-sized pieces. Dice garlic. Heat 1/2T canola oil in pan. Add chicken and cook thoroughly. Empty chicken and any juices into large pot. Heat 1/2T canola oil in pan. Add garlic and other vegetables and sautee until onions are translucent. Empty veggetables and garlic into pot along with any oil or juices. Add equal parts tomato paste and peanut butter to pot. (I usually start with 1/2 cup and add more up to 1 cup. Also, you can use either chunky or smooth peanut butter, depending on the desired consistency of the finished product.) Add chicken broth slowly while mixing until sauce is smooth. (You may not need the whole 1/2 cup, or you may need a little more.) Allow to simmer for at least 20 minutes or until sauce is adequately thickened. Serve over rice or couscous.
