Using low fat, high moisture method to wrap skinless, boneless chicken breasts, shallots, red bell peppers, snow peas, broccoli, mushrooms and onion in heavy duty foil.

Recipe Ingredients for Chicken and vegetables en papillote

1 medium Green Bell Pepper
1 cup Onions
1 cup Broccoli
1 cup pieces Mushrooms
1 cup Peas, Edible-podded
0.25 cup Light
1 cup, chopped or diced Chicken, Breast, Meat Only

Recipe Directions for Chicken and vegetables en papillote

  1. 1.Pre heat oven to 450. Spray large non stick skillet with canola oil and cook vegetables. Stir constantly until the vegetables just begin to soften (2-3 min)

  2. lay out 4 (12)inch squares of heavy duty foil or parchment paper on a work surface. Place a chicken breast in the middle of each square and sprinkle with the salt and pepper. Top with vegetables, drizzling any pan juices over the febetables and sprinkle with parsley. make a packet by bringing hte sides of the foil up to meet in the center, fodling over the edges, then folding the edges of the ends together. Allowing room for the packats to expand, crimp the edges.

  3. 3. bake the packets until the chicken is cooked through, about 18 min. Open the packets carefully when testing for doneness, as steam will escape. Serve, drizzled with any juices.
