Recipe Ingredients for Chicken Vegetable Stir Fry

1 lb boneless skinless chicken breast (Cut into 3/4 by 1 1/2 inch strips)
1 medium red pepper (Cut into narrow wedges)
3 cloves garlic (Minced)
1 medium onion (Cut into narrow wedges)
2 1/2 cups sliced fresh mushrooms
2 1/2 cups brocolli (Florets)
2 medium carrots (Sliced diagonally)
14 oz chicken broth
3 tbsp soy sauce (Divided)
3 tbsp canola oil
2 tbsp corn starch
2 1/2 cups bok choy (Sliced diagonally)
12 oz baby corn (Cut)
1/2 tsp ground ginger
1/2 tsp Chinese 5 Spice

Recipe Directions for Chicken Vegetable Stir Fry

  1. Have all slicing and mixing of ingredients done before starting to cook.

  2. Mix chicken broth, 2 Tbsp soy sauce and corn starch together in a measuring cup.

  3. Heat oil in a large deep skillet over medium high heat.

  4. Add garlic and saute for 20 or 30 seconds.

  5. Add chicken and stir fry until chicken is no longer pink.

  6. Add carrot and stir fry for 3 minutes.

  7. Add mushrooms, brocolli and onion, sprinkle with ginger, remaining soy sauce and Chinese 5 spice and stir fry another 3 to 4 minutes.

  8. Remix broth mixture, add to pan and bring to a boil.

  9. Continue cooking until sauce thickens and vegetables are tender crisp.

  10. Serve with rice
