Chicken & Vegetable Hearty Stew

Recipe Ingredients for Chicken & Vegetable Stew LMV

1 tsp Vegetable Oil
800 g Skinless Chicken Breasts, chopped 2cm chuncks
300 g Onions, chopped
1200 g Potatoes, thin sliced
750 g Carrots, thin sliced
750 g Leeks, chopped
4 litres chicken stock (6 cubes & 4 litres water)

Recipe Directions for Chicken & Vegetable Stew LMV

  1. Prepare all Ingredients.

  2. Fry Chicken in Veg Oil until browning.

  3. Fry Onion until soften.

  4. Add all the rest of the ingredients and bring to the boil.

  5. Turn down to a simmer and cook for 30mins or until potatoes and carrots are softened and chicken is cooked through.

  6. Remove from heat and serve.
