Recipe Ingredients for Chicken Vegetable Soup with Wide Noodles

2 T vegetable oil
1 medium onion, chopped
32 oz chicken broth, low sodium
1 lb boneless skinless chicken thighs
8 oz carrots cut into medium dice
4 oz celery stalks cut into medium dice
3/4 cup frozen green peas
4 oz wide egg noodles (two heaping cups)
1 tsp dried thyme leaves

Recipe Directions for Chicken Vegetable Soup with Wide Noodles

  1. Heat the oil in a Dutch oven or soup kettle.

  2. Add the onions; saute to slightly soften, about 2 minutes.

  3. Add the remaining vegetables, meat, starch, chicken broth and spice.

  4. Partially cover and simmer until vegetables are tender and flavors have blended, about 20 minutes.

  5. Season with salt and black pepper to taste.
