A Cream of chicken soup thickened with a roux and filled with hearty vegetables. Also good with dumplings.

Recipe Ingredients for Chicken and Vegetable Soup

1 can (10.75 oz) chicken broth
4 cups low fat milk
3 carrots, sliced
3 stalks celery, sliced
1 large white onion
8 oz frozen green peas
1/3 cup all purpose flour
3 cups cooked boneless skinless chicken, diced
3 cups water
1 T unsalted butter
2 T canola oil, divided
3 cloves garlic, diced

Recipe Directions for Chicken and Vegetable Soup

  1. Add 1T oil in saute pan, melt, then add chopped vegetables and garlic. Cook for 5 minutes or until onions have softened.

  2. Melt butter in large soup pot. Add remaining 1 T oil. Stir completely, then whisk in flour and cook for 2 minutes or until golden.

  3. Add broth and milk, whisk until lumps disappear. Add vegetables and chicken, season with fresh ground pepper and italian seasoning to taste. Simmer for 15 minutes.
