Recipe Ingredients for Chicken Vegetable Soup

3 fillet Boneless Skinless Breast Fillets
6 oz Eggplant
12 oz Squash, Summer, Zucchini, Includes Skin
12 oz Squash, Summer, All Varieties
1 medium (2-1/2" dia) Onions
3 medium Carrots
1 pepper Peppers, Jalapeno
2 clove Garlic
1 serving, raw Cilantro
8 serving Chicken 33% Less Sodium Broth Rtsb

Recipe Directions for Chicken Vegetable Soup

  1. Boil chicken separately

  2. Once cooked completely remove from water and shred or dice then set aside.

  3. Chop all veggies to your preferred size. (chunky is best)

  4. Add half the onion to a large pot sprayed with cooking spray (or use oil) and saute until sweet fragrant.

  5. Add all other veggies and give everything a good mix.

  6. Add broth and reserved chicken.

  7. Bring to a boil, reduce to medium low and let sit for 30 min or until ready to serve.
