Vegetable soup with chicken and brown rice

Recipe Ingredients for Chicken Vegetable Soup

32 oz V8 100% Vegetable Juice
1 can (303 x 406) Corn, Sweet, Yellow
1 can (303 x 406) Beans, Snap, Green
1/2 can (303 x 406) Peas, Green
1 potato large (3" to 4-1/4" dia) Potatoes, Red, Flesh And Skin
1 cup Boil-in-Bag Brown Rice
8 oz Fresh Boneless Skinless Chicken Breasts
1 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1/2 packet Sauce, Sour Cream, Dehydrated, Dry
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 1/2 cup (8 fl oz) Water
1 tsp Extra Virgin Olive Oil from Tuscany
1 oz Great Northern Beans
1/2 tsp Pepper, Black
1/2 tsp Salt, Table
1/2 tsp Seasoning Blend
3 tsp Margarine Non-Hydrogenated Calorie-Reduced Light

Recipe Directions for Chicken Vegetable Soup

Cook rice according to package directions. Saute chicken in margarine and olive oil till lightly browned. Set aside, allow to cool for 10 minutes and then dice into small chunks. Add milk to pan and add sauce mix. Allow to cook for about 3 minutes, and scrape any bits off the bottom of pan. Add rice and chicken back to pan. Simmer for 5 minutes, turn off heat and cover. Allow to sit for 15 minutes. While the chicken and rice mixture is resting,begin dicing potato and tomato. Add all remaining ingredients to large crock pot. Once time has elapsed carefully stir in rice and chicken mixture. Turn crock pot on low and cook for approximately 8 hours. Stir once or twice to incorporate everything. It is done when the potatoes and beans are soft.
