Excellent veggie soup - filling yet low in calories.

Recipe Ingredients for Chicken Vegetable Soup

20.5 oz Boneless Skinless Breast Fillets
10 oz Chicken, Thigh, Meat Only
2 tomato Tomatoes, Red, Ripe
0.5 head, medium (5-6" dia) Cauliflower
0.5 head, medium (about 5" dia) Cabbage, Red
16 oz Carrots
2 cup chopped Red Onion
5 medium stalks Celery
2 clove Garlic
8 cup Chicken Broth
1 cup Parsley

Recipe Directions for Chicken Vegetable Soup

  1. Add 16 cups of water, 5 cans of broth, and all veggies, plus some salt and pepper. Tos in the chicken and simmer med heat for 30 min to 1 hour until chicken is done.

  2. Remove chicken, dice or shred, then return to pot, along with parsley and other seasonings to taste.

  3. Cook another hour or so.

  4. NOTE - red cabbage makes the soup red/purple. You can sub green cabbage and yellow onion for clear broth and less sweet flavor - although I add cayenne pepper to heat it up a bit :)
