Recipe Ingredients for Chicken and Vegetable Soup

1 1/2 litres chicken stock
4 small carrots, very thinly sliced
110 g celery, finely diced
2 leek, halved lengthways and thinly diced
300 g chicken, sliced
1 tablespoons chopped fresh parsley
28 g capsicum, red and green
2 tablespoons coriander

Recipe Directions for Chicken and Vegetable Soup

  1. Out the stock in a large saucepan and add the carrots, celery and leek. BRing to the boil, reduce the heat to low and simmer gently, partially covered for 10 minutes.

  2. Stir in the chicken and continue cooking for a further 10-15 minutes, or until the vegetables are tender.

  3. Add the chopped coriander and parsley, then taste and adjust the seasoning, adding pepper and salt as needed.

  4. Ladle the soup into warmed bowls, garnish with parsley and serve.
