Very tasty and can be served over a few days or frozen for later. *Optional (but more calories): once served, sprinkle shredded cheese & tortilla strips over each serving.

Recipe Ingredients for Chicken Vegetable Soup

64 oz low sodium chicken broth
1 diced tomatoes canned
2 zucchini
1 small onion
4 celery stalks
3 chicken breast

Recipe Directions for Chicken Vegetable Soup

  1. Boil Chicken. While chicken is boiling, chop onion (may be diced or chunky depending on preference) & Celery. Combine chicken broth, canned tomatoes, onions & celery in soup pot and cook on med-high until onions soften (about 30 minutes). Half zucchini long ways and then slice and add to pot. Shred boiled chicken & add to pot. Cook for another 30 minutes.

  2. This recipe may also be done in a crockpot. Follow all above preparation, including boiling & shredding chicken. Add all ingredients to crockpot and cook on high for 6-8 hours.
