Home made chicken and vegetable soup 1 1/2 C serving size

Recipe Ingredients for Chicken Vegetable Soup

1/2 lb. chicken breast, cubed
2 c. Low Fat Chicken Broth
1/2 Yellow Onion, diced
2 medium Turnips, diced
14 oz. canned Green Beans
1/2 c. Frozen Peas
1 c. Carrots, sliced
1 stalk celery, diced
2 c. Water
2 T. Extra Virgin Olive Oil

Recipe Directions for Chicken Vegetable Soup

  1. Season and cube chicken breasts, and slightly brown in pot with olive oil.

  2. Add onions and cook until transluscent.

  3. Add chicken broth. Bring to a boil, then reduce heat, cover and simmer for approximately 1/2 hour.

  4. Add the rest of the ingredients and bring to a boil. Cover and simmer for 1 1/2 hours.
