A delicious soup with a tomato base. Contains a lot of vegetables.

Recipe Ingredients for chicken vegetable soup

28 oz green beans
28 oz diced tomatoes
28 oz canned corn
48 oz tomato juice
16 oz boneless skinless chicken breast
4 medium white potatoes
12 baby carrots
1 medium onion
1/2 tsp oregano
1/4 tsp marjoram

Recipe Directions for chicken vegetable soup

  1. Place tomato juice, 1/2 can water, chicken breasts, 2 bay leaves, 1/2 tsp oregano, 4 tsp salt, 1/4 tsp marjoram and pepper in large dutch oven. Simmer, covered for 2 hours.

  2. Remove chicken and bay leaves. Throw bay leaves away.

  3. Add corn, diced tomatoes, cubeb potatoes, green beans, sliced carrots, and onion.

  4. Shred chicken and add back to soup.

  5. Simmer one hour and enjoy.
