Easy home-made chicken & veggie soup.

Recipe Ingredients for Chicken & Vegetable Soup

15 oz. canned diced tomatoes
1 small onion, diced
1 medium red bell pepper, diced
1 medium yellow bell pepper, diced
1 medium orange bell pepper, diced
2 cups chicken, cooked and diced
5 cups chicken broth, low sodium
1 cup frozen peas
1 cup frozen green beans
1/4 cup barley
15 oz. canned lima beans
1 tsp. thyme, dried
1 tbsp. parsley, dried
1/4 tsp. white pepper

Recipe Directions for Chicken & Vegetable Soup

In a large stock pot, place a small amount of the chicken broth and the onions & peppers. Saute until onions are tender. Add remaining vegetables and broth. Add seasonings & simmer for 1 hour.
