Flavorful from the veggies but low calorie

Recipe Ingredients for Chicken and vegetable soup

12 cups water
1 lb chicken, chopped
2 tbsp butter
2 vidalia onions, chopped
8 oz carrots, chopped
4 oz mushrooms, chopped
2 celery stalks, chopped
1 tsp garlic
1/2 tsp salt
1/8 tsp pepper
2/3 cup Anellini, (gluten-free), 4oz tiny pasta

Recipe Directions for Chicken and vegetable soup

  1. Preferably boil bone-in chicken or chicken carcass, strain broth, pick chicken clean then dice and add back to broth. However, diced/canned chicken and water or canned broth can be used.

  2. Fine chop vegetables, saute in butter in bottom of stock pot until opaque/soft. Add broth, chicken, pasta and seasonings. Return to boil and adjust seasonings as needed.
