A quick chicken and vegetable soup

Recipe Ingredients for Chicken and vegetable soup

3 cups diced carrots
3 cups diced celery
1/2 cup barley
12 cups chicken broth
3 medium potatos
2 medium onions
3/4 lb ground chicken

Recipe Directions for Chicken and vegetable soup

  1. brown onions in olive oil

  2. add ground chicken and cook through

  3. add carrots, broth and barley. cook for 30 minutes. Add potatos and celery, salt and pepper to taste and cook for an additional 30 minutes. Freezes and stores well. A serving is almost 5 cups.
