Recipe Ingredients for Chicken Vegetable Soup with Pasta

4 cups chicken stock
1 cup carrots, diced
1/2 cup celery, diced
1/2 cup onion, diced
2 cloves garlic, minced
1 tsp oil
1/4 cup parmesan cheese (or 2 to 3 1x2 inch rinds)
1/2 cup dry macaroni
1/4 cup sun-dried tomatoes, small diced
1 medium zucchini, diced
1/2 cup frozen peas
6 ounces cooked chicken

Recipe Directions for Chicken Vegetable Soup with Pasta

Heat stock with 2 to 3 rinds of parmesan cheese. Simmer until cheese rinds begin to melt. Transfer stock to a bowl and remove rinds. Place oil in same pan and saute carrots, onion, and celery until soft. Then add zucchini and garlic; saute several minutes until zucchini begins to soften. Return stock to pan along with chicken, tomato, and peas. Bring to a boil, and reduce. Let simmer for about 5 minutes. Serve.
