Recipe Ingredients for Chicken Vegetable Saute without Pasta

4 oz Chicken Breast (cubed)
1 Zucchini (sliced)
1 Red Pepper (diced)
1 Red Onion (sliced)
1 cup Mushrooms (sliced)
3 cloves of Garlic (sliced)
2 cups of Spinach
1 Tomato (diced)
4 tbsp Olive Oil

Recipe Directions for Chicken Vegetable Saute without Pasta

Saute Chicken in 1/2 of oil until no longer pink. Set aside, then add Zucchini & Red Pepper and saute for 2 minutes. Then add the Mushrooms, Onion & Garlic and saute another 2 minutes. Return chicken to pan and then add the Spinach and Tomato and heat through. Add Salt & Pepper to your preferred taste. May want to salt & pepper chicken before sauteing.
