Recipe Ingredients for Chicken and Vegetable Sauté

150 g chicken breast, meat only, cubed
2 cloves garlic, crushed
2 tsp extra virgin olive oil
100 g zucchini, diced
130 g eggplant, diced
100 g tomato, diced
75 g carrots, cut into thin strips
1 tbsp parsley, chopped
1 pinch oregano
1 pinch dried thyme
1/4 tsp salt
1/8 tsp lemon pepper

Recipe Directions for Chicken and Vegetable Sauté

  1. Heat 1 tsp oil and brown chicken with half the garlic, some salt & pepper. Remove and set aside.

  2. Heat rest of oil and sauté rest of garlic, eggplant and zucchini till beginning to soften. Add in carrots, beans and herbs. Season with rest of salt & pepper. Cook for two minutes.

  3. Add in tomatoes and cooked chicken pieces with a couple of tablespoons of water. Cover and allow to simmer for 5 minutes or until veggies are just tender but not over-cooked.

  4. Serve warm over rice, pasta, couscous or with bread.
