Recipe Ingredients for Chicken and vegetable risotto

700 ml chicken broth
3/4 cup carrot, diced
1/2 cup celery, diced
3 cups bell peppers, diced
1/2 cup broccoli florets
1/2 cup white wine
1 small onion, minced
5 cloves garlic
1 cup mushroom, sliced
10 g parmesan cheese
3 tbsp butter
1 tsp extra virgin olive oil
315 g chicken breast
200 g arborio rice

Recipe Directions for Chicken and vegetable risotto

Cook chicken and vegetables separately. Make risotto. Combine rice with chicken and vegetables. Add thyme butter and parmesan off the heat.
