This is a classic soup we make year-round.

Recipe Ingredients for Chicken, Vegetable, and Rice Soup

6 cups of water
2 cups vegetable broth
3 cups chicken stock
1 chicken breast, meat only (boiled)
1 cup jasmine rice
1 1/2 tbsp extra virgin olive oil
2 cups sliced carrots
4 cups gold potatoes diced
1 1/4 cup chopped celery
1 1/4 cup diced onion
3 cloves of garlic
1 serrano peppers
3 tbsp lemon juice
2 tbsp thyme
1 1/2 tsp paprika
1 1/2 tbsp salt
1 tsp pepper

Recipe Directions for Chicken, Vegetable, and Rice Soup

Saute veggies, onions, and garlic in olive oil. Add vegetable broth and chicken stock and simmer for 15 minutes until vegetable begin to get soft. Add water, rice, shredded chicken, and the rest of the ingredients and simmer another 20-30 minutes, just until rice is done.
