Chicken and vegetable ragout with rice

Recipe Ingredients for Chicken and Vegetable Ragout with Rice

1 cup uncooked rice
1 lb chicken tenders
4 cloves garlic, sliced
1 cup green beans
1 cup zucchini, sliced
1 cup mushroom slices
1/2 tsp dried basil leaves (1 1/2 tsp fresh chopped)
1/4 tsp dried thyme leaves (3/4 tsp fresh)
2 tomatoes, sliced into 8 pieces

Recipe Directions for Chicken and Vegetable Ragout with Rice

  1. Prepare rice

  2. Apply coating spray to a large non-stick skillet

  3. Add chicken and cook 2-3 minutes each side or until cooked through

  4. Remove from skillet and set aside

  5. Add garlic, green beans, zucchini and cook for 2-3 minutes

  6. Add mushrooms, herbs and cook 2 minutes more

  7. Add tomatoes and cook until heated through

  8. Pour ragout over chicken and serve with rice
