Recipe Ingredients for Chicken and Vegetable Pasta au Gratin

8 ounces chicken thighs, boned, cut into pieces
2 carrots, thinly sliced
1 tbsp. garlic, minced
1/4 cup flour, all purpose
1 cup 2% mozzarella cheese, shredded
3/4 cup tomatoes, chopped
1/4 cup grated parmesan cheese
1 cup onions, chopped
1 cup chicken stock
1 zucchini, sliced thin
1 tsp. italian herb seasoning
2 cups skim milk
8 ounces penne pasta
1/4 cup dry bread crumbs

Recipe Directions for Chicken and Vegetable Pasta au Gratin

  1. preheat oven to 400F

  2. boil water for and cook penne pasta.

  3. heat skillet (add Pam if needed) add chicken, onions and 1/4 c of the stock. cook for 5 minutes or until onions are softened not browned.

  4. add carrots, zucchini, italian seasoning and the remaining stock. cover and cook 5-8 minutes, or until the vegetables are slightly tender. Add flour cooking stirring constantly for 2 minutes.

  5. gradually add the milk and mozzarella. cook stirring frequently for 4 minutes until the sauce thickens.

  6. drain pasta and add to the chicken mixture, add tomatoes and mix well.

  7. place in 9 x 13 pan and top with bread crumbs and parmesan. Bake 20 minutes or until topping is golden brown.
