Easy, Healthy, Vegetable-full Soup that is bright with color

Recipe Ingredients for Chicken Vegetable Noodle Soup

1 cup, chopped or diced Chicken, Breast, Meat Only
3 piece RTC Boneless, Skinless IF Chicken Thighs
10 cup Natural Goodness Chicken Broth
8 oz Carrots, Baby
1 cup chopped Red Onion
3 clove Garlic
1 cup, diced Celery
3 cup, chopped Kale
1 Teaspoon Parsley
0.5 tbsp Sage, Ground
3 serving VIGO EXTRA VIRGIN OLIVE OIL

Recipe Directions for Chicken Vegetable Noodle Soup

  1. Heat half the oil in pot large enough to hold all ingredients. Cook chicken on all sides until no longer pink. Remove from pot.

  2. Pulse together in food processor the carrots, onion, garlic and celery until roughly chopped and combined. Remove stems from well-rinsed kale and chop into pieces approximately 1 1/2-2 inches.

  3. Heat remaining oil ito medium in same pot and saute vegetables until onion is soft. Add kale and mix welll; continue to saute for another 5 minutes.

  4. Add chicken, parsley and sage and stir well. Add broth and bring to boil. Turn down heat and simmer until carrots are soft but kale is still bright green, approximately 10 minutes.
