Great for lunch...can easily be modified to add wild rice, whole wheat pasta, cashews and or extra veggies

Recipe Ingredients for Chicken Vegetable Medley

100 g sugar snap peas
120 g red peppers
120 g green peppers
130 g bok choy
1/2 c kale
20 g shallots
6 cloves garlic
3 serving Red Hot Sauce
400 g Fresh Boneless Skinless Chicken Breasts

Recipe Directions for Chicken Vegetable Medley

  1. chop red peppers, green peppers and bok choy in med sized pieces

  2. mince garlic and shallots

  3. thinly slice chicken breasts

  4. heat 2 tb olive oil in a pan med high heat and sautee garlic and shallots

  5. add peppers and chicken slices

  6. when chicken is just about cooked add the bok choy and kale (as it cooks very fast)

  7. add seasoning to taste and red hot sauce for a little kick
