Chopped Chicken Lasagna with Mushrooms, spinach, tomatoes, garlic and fresh ricotta cheese

Recipe Ingredients for Chicken Vegetable Lasagna

1/2 cup slices Carrots
1 cup Ricotta, Part Skim Milk Cheese
2 chicken breast
6 clove Garlic
1 cup pieces Mushrooms, Shiitake
9 oz Lasagna Noodles
2 dash Salt, Table
1 tsp Spices Oregano Leaves
4 dash Pepper, Black
1 cup Spinach
1 cup Tomatoes Stewed No Salt Added
2 cup Tomato sauce

Recipe Directions for Chicken Vegetable Lasagna

  1. In a large pot boil lasagna noodles approximately 8 to 10 minutes until al dente.

  2. In one skillet simmer chicken breast in 2 tablespoons of water and chop into a medium dice.

  3. In another simmer carrots, mushrooms and minced garlic cloves in 1/4m cup water.

  4. Add a few pinches of salt and a few dashes of black pepper, 1 teaspoon of oregano, and both the stewed tomatoes and tomato sauce to the vegetables and heat on low while chopping the spinach.

  5. Mix the pasta sauce with the chicken and ricotta.

  6. In a 12 by 8 by 4 inch pan layer one third of the lasagna and accordingly with the Meat sauce and then spinach leaves and repeat.

  7. Add the third part of the lasagna and top with more ricotta and chopped spinach leaves then bake on 350 for 15 to 20 minutes until the cheese has melted and browned.
