Recipe Ingredients for Chicken Vegetable Jumbotta

1 cup diced tomatoes
1 cup zucchini, diced
1 cup summer squash, diced
8 oz. mushroom pieces
1 cup skinless chicken breast, boiled and shredded
1/2 cup green pepper
1/2 cup red or yellow pepper
1 cup spinach, chopped
1 tbsp olive oil
1/8 tsp salt
1/8 tsp pepper
1/8 tsp garlic powder
1/4 cup Parmesan cheese, optional

Recipe Directions for Chicken Vegetable Jumbotta

  1. 1 tbs olive oil in fry pan

  2. add zucchini and squash, muchrooms and peppers

  3. add cooked chicken breast

  4. add can of tomatoes and spinach

  5. season to taste

  6. cover and cook on low heat til veggies tender but not mushy
