Recipe Ingredients for Chicken and vegetable fettuccine

500 grams Boneless Skinless Breast Fillets
250 grams Carrots
20 grams Celery
1 tbsp Garlic Paste
100 grams Portobello Mushrooms
4 piece Tomatoes, Sun-dried, Packed In Oil, Drained
200 grams Spinach Leaves
100 grams White Onion
1 cup Cream, Fluid, Half And Half
1/4 cup Lemon Juice
2 1tsp Olive Oil
1/4 Glass Wine
4 tsp Sea Salt
8 dash Pepper, Black
1/4 pkg Organic Spinach Fettucini
1 Cube Stock Cubes

Recipe Directions for Chicken and vegetable fettuccine

  1. In a mixer, puree carrots, celery and lemon juice and reserve on the side.

  2. Coat a rather deep pan with olive oil and fry onions and garlic until golden, then add chicken breasts (cut in pieces)

  3. When chicken is half cooked add carrot and celery mixture, white wine, herbs of your choice and season; then cover and let simmer on low heat.

  4. In a pot boil the spinach fettuccine.

  5. While pasta is boiling, make fine 'fettuccine carrots(using the last carrot), and courgettes.

  6. When pasta is almost ready, add carrots and courgettes fettuccine to chicken; then add cream, season once more according to choice; cover and let simmer.

  7. Drain pasta (which should be ready by now) then bring back to the pot away from the fire.

  8. Incorporate chicken mixture slowly and mix well. It should be very very creamy! Season once more if needed.

  9. Cut the sun-dried tomatoes and either mix in or sprinkle on top.

  10. Serve with or without Parmesan sprinkled on top
