Recipe Ingredients for Chicken and Vegetable Curry

2 breast, bone and skin removed Chicken, Breast, Meat Only
0.1 oz Extra Virgin Olive Oil
1 onion Yellow Onion
3 clove Garlic
1.5 cup slices Carrots
14 oz Diced Tomatoes
2 cup, chopped Broccoli
2 tbsp Curry Powder
5 g Cumin Powder
1 tsp Spices Ground Coriander

Recipe Directions for Chicken and Vegetable Curry

With one sauté tablespoon of oil garlic, onions in a large pan over medium heat, stirring often and letting sizzle, 5 to 6 minutes; add spices, chicken. Pat the chicken dry, sprinkle with salt and pepper and add other tablespoon of oil to the pan. Cook the chicken in the onion-curry mixture until golden on all sides. Add the carrots, basil, (other vegetables if you wish, e.g. potatoes, broccoli, etc.) and cook, stirring, until the vegetables are coated, about 2 minutes. Add tomatoes and bring to a simmer; cover mixture with water. Let the chicken simmer until cooked through and the sauce begins to thicken, about 20 minutes.
