A hearty healthy chili that is good for those cold winter days.

Recipe Ingredients for Chicken Vegetable Chili

1 lb ground chicken
2 cups chopped tomato
1/2 cup chopped mushroom
1/4 cup chopped radish
1/2 cup chopped onion
1/2 cup chopped celery
2 cloves minced garlic
1/2 cup chopped green pepper
232 ml tomato paste
300 ml vegetable juice cocktail
398 ml kidney beans
2 tsp chili powder

Recipe Directions for Chicken Vegetable Chili

  1. Fry ground chicken in a fry pan with a bit of water (no oil)

  2. Puree or chop enough tomato for about 2 cups( I use a food processor)

  3. Chop the mushroom, celery, onion, and green pepper

  4. Add the tomato paste, kidney beans and vegetable juice (V8 juice is fine too)

  5. Combine all ingredients and put in a slow cooker and simmer for 4 hours

  6. Add Chili powder to taste....hot peppers may also be added to add taste
