Chicken soup with barley and vegetables

Recipe Ingredients for Chicken, Vegetable and Barley soup

2 chicken breast
1 onion
3 carrots
1 cup chopped celery
2 potatoes
1 cup cauliflower, green
1 tablespoon Smart Balance
2 cloves garlic
1 cup green beans
32 ounce low sodium chicken broth
1/2 cup barley
2 cups water

Recipe Directions for Chicken, Vegetable and Barley soup

  1. Mince garlic, and brown with chicken one piece at a time in a large pot with smart balance spread. Remove chicken to bowl after browned. Slice onions, and brown in pot until soft.

  2. While chicken is browning, Place carrots, celery, potatoes, green beans (if fresh) barley and 1/2 cup water in a pressure cooker. Bring to a boil and cook for 3 minutes when pressure knob starts rocking. After 3 minutes cool pressure cooker with cold water until pressure is released

  3. Add chicken back to pot with onion, chicken broth and bring to a boil. Add Pressure cooker ingredients (including water) to chicken mixture. Add green cauliflower (and green beans if frozen) to soup mix and cook for 1 hour
