Lunch recipe, can be bulked up for dinner

Recipe Ingredients for Chicken and Veg Stir fry

1 tbsp pineapple
1/2 courgette
1/2 carrot
1/4 red onion
2 tbsp sweetcorn
5 oz Chicken
2 tbsp Soy Sauce
1 garlic clove
2 tbsp peppers
4 tbsp mushrooms

Recipe Directions for Chicken and Veg Stir fry

  1. Dice Chicken

  2. Stir fry (in low fat /spray oil) sliced onion and garlic clove, add mushrooms

  3. slice carrot into thin strips, and slice courgette into small strips, and add into the pan,

  4. add rest of vegetables and cook until soft

  5. add half of soy sauce, and add chicken.

  6. Just before chicken is completely cooked, add pineapple and rest of soy sauce.

  7. Once chicken is cooked, serve and enjoy
