Recipe Ingredients for Chicken and veg, a la Chris

2 Serving Chicken
3.5 serving Tomatoes, Crushed, Canned
1 medium raw Onion Red
2 clove Garlic
1 tsp Oregano, Ground
1 tsp Parsley, Dried
1 fl oz Wine, Table, Red
1 serving light choice mozzarella
100 grams Feta Cheese
1 tbsp Olives, Ripe, Canned (Small-extra Large)
2 Small Aubergine
1 medium Squash, Summer, Zucchini, Includes Skin
1 oz Parmesan, Grated Cheese
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red

Recipe Directions for Chicken and veg, a la Chris

  1. Slice the peppers, aubergine and zuccini then griddle. Set aside.

  2. Fry the onion and garlic til soft, then add the sliced chicken to the pan.

  3. Once browned, add the wine, the tomatoes, the herbs, and the olives.

  4. Simmer for around 20 mins, then leave to cool.

  5. Once cooled, layer all the ingredients in an oven proof dish, finishing with a layer of cheese.

  6. Bake for around 20 mins, or until browned on top.
