Chicken and Upo (Bottle Gourd) Soup Recipe

Filipino cuisine. Originally uses Upo or bottle gourd but since there was no option for that the nearest similar vegetable, calabash, has been chosen instead. This is served as a main dish (or ulam) along with cooked white rice.

Recipe Ingredients for Chicken and upo (bottle gourd) soup

4 cups chicken broth
1 1/2 cups chicken meat, cut into bite-sized pieces
2 cups, cut into 1" cubes, Gourd, White-flowered (Calabash)
4 cloves garlic, minced
1 onion, finely sliced
2 tomatoes, roughly chopped
2 tablespoons canola oil
1/4 teaspoon fish sauce
1 freshly ground pepper

Recipe Directions for Chicken and upo (bottle gourd) soup

  1. Heat the oil in a large pot.

  2. Saute the garlic, onion and tomatoes until they start to turn soft.

  3. Add the chicken meat and upo cubes.

  4. Pour in the broth.

  5. Season with fish sauce (add more if needed) and add a generous amount of freshly ground pepper.

  6. Bring to a boil, lower the heat, cover and simmer for 15 to 20 minutes or until the upo is done.

  7. Garnish with snipped cilantro (optional but highly recommended) and serve at once.
