Chicken with red potatoes & artichokes/lima beans

Recipe Ingredients for Chicken Tuscany

3 tablespoons olive oil
1 lb of chicken thighs
1 lb small red potatoes (halved)
2 tablespoons garlic (minced)
3/4 cup white wine
3/4 cup chicken broth
1 tsp dried oregano
1 tsp thyme
8 oz artichoke
8 oz frozen lima beans
2 tablespoons Smart Balance butter

Recipe Directions for Chicken Tuscany

  1. Heat oven to 350 degrees.

  2. Brown chicken thighs in olive oil on both sides until golden brown on both sides and then place in casserole dish. Brown halved red potatoes in same pan until golden brown. Place in casserole dish.

  3. Over med-high heat, add garlic and cook for a few seconds. Add wine, scraping sides and mix well. Add chicken broth and bring to boil adding the organo and thyme. Put liguid into casserole dish and add butter.

  4. Cover casserole with foil and place in oven to bake for 20 minutes. After 20 minutes, turn chicken over and bake an additional 20 minutes. Add artichokes and lima beans and bake for additional 20 minutes. Salt and pepper to taste.
