This is a soup recipe from Flylady.com intended to help those with a winter flu bug to feel better. My adjustments include: no 1/4 head of cabbage, no turnip, added meat. Flylady listed several options for individual servings as well.

Recipe Ingredients for Chicken or Turkey Veggie Soup

29 oz can tomatoes, canned
2 1/2 cups potatoes
1 1/2 cups green beans
1/2 cup carrots, chopped
1/2 cup celery, chopped
1/2 cup onion, chopped
4 cups broth, chicken, low-sodium, low-fat
2 1/2 cups broth, turkey, homemade
1 tbls garlic, crushed
2 tbls olive oil
2 cups turkey, cut up
1/2 tsp Thyme
1 tsp salt
1 tsp pepper

Recipe Directions for Chicken or Turkey Veggie Soup

  1. In a large soup pot, heat one tablespoon of olive oil over medium high heat. Add onion and cook till nearly translucent. Add garlic and saute' another couple of minutes - don't brown.

  2. Add rest of olive oil and veggies; sauteing for just a minute or two "for the wonderful flavor this quick step will infuse in your soup." Add seasoning while sauteing.

  3. Option 1: Put veggies in crock-pot, add tomatoes, broth, and meat. Cook on low 7-9 hours or high 4-6 hours (cooking time will depend on crock pot).

  4. Option 2: Cook veggies for 15-20 minutes until just about tender and then add tomatoes, broth, and meat.

  5. Just before serving, gently mash some of the potato chunks to thicken the soup.
