Recipe Ingredients for Chicken Tostadas with Cilantro-Lime Cream

4 tortillas 6" White Corn Tortillas 12ct
1 1tsp Olive Oil
1 dash Salt, Table
2 oz Low-Fat Sour Cream
3 sprigs Coriander Leaves
1 wedge yields Lime Juice
1 cup Black Beans - 50% less sodium
1/4 tsp Cumin
0.13 tsp Onion Powder
1.5 cup, chopped or diced Chicken, Roasting, Meat Only
2 large (1" to 1-1/4" dia) Radishes
3 oz Mixed Baby Greens
28 g Goat Cheese Crumbles

Recipe Directions for Chicken Tostadas with Cilantro-Lime Cream

  1. Brush both sides of tortillas with olive oil and salt. Place on baking sheet and bake at 400 degrees for 10 min

  2. Combine sour cream, cilantro and lime juice. Set aside.

  3. Combine beans, cumin, and onion powder. (I also add a bit of cilantro). Heat in microwave.

  4. Spread tortillans with bean mixture, top with chicken (warm), radishes, lettuce, sour cream mix and crumble goat cheese. Serve immediately,
