Recipe Ingredients for Chicken Tortilla soup for three reanalyzed 8/28/08

2 1/2 ounces grilled chicken breast strips, foster farms
14 1/2 oz diced tomatoes
84 grams corn tortilla,cut into triangles
3 cloves garlic
1/2 cup cilantro
3 cups organic free range chicken broth
1 red sweet pepper
1/2 jalapeno pepper
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Chicken Tortilla soup for three reanalyzed 8/28/08

  1. I'm actually using 3 ounces of Costco foster farms grilled chicken breast strips. Had to enter as 2 1/2 ounces chicken to get close to the actual 110 calories of the foster farms.

  2. put all ingredients except broth, chicken and salt and pepper into food processor. Process until finely minced. Spray pot with olive oil pam and sautee for about 5 minutes. Then add broth and chicken strips, simmer for another 5 minutes.

  4. take four "pepito or mission brand 6 inch corn tortillas (90 calories per two tortillas) cut into triangles, lay on a cookie sheet and sprinkle with garlic salt and lightly spray with olive oil pam (optional) preheat oven to 400 degrees and bake for 8-10 minutes. Let cool. top off each bowl with 1/3 of the chips

  5. Makes three servings.
