Recipe Ingredients for Chicken Tortilla Soup sans Tortillas

5 oz Chicken, Breast, Meat Only
3 oz Onion Red
3 oz Peppers, Sweet, Red
0.25 tbsp Minced Garlic
6 cup Chicken Broth
15.25 oz Corn, Sweet, White
15.5 oz Black Beans, Organic
1/2 cup Mild Diced Tomatoes and Green Chilies
2 1tsp Olive Oil
1 serving Chili Oil
4.5 oz Peppers, Chili, Green, Canned
1 tbsp Tomato Paste
1 tsp Paprika

Recipe Directions for Chicken Tortilla Soup sans Tortillas

  1. Saute onions, garlic, redpeppers in olive oil and half of chili oil.

  2. Rub chicken breasts in remaining chili oil, half of spices, and salt and pepper

  3. Grill or saute chicken until done, shred with forks and set aside.

  4. Add chicken broth and 2 cups of water to sauted veggies. Simmer 10 minutes.

  5. Add in corn, beans, rotel, chillis, tomato paste, chicken and remaining spices.

  6. Let simmer 10 more minutes.
