A healthy, satisfying and very tasty soup

Recipe Ingredients for Chicken Tortilla soup

3 red peppers
1 vidalia onion
2 tbsp. olive oil
1 1/2 lb. chicken tenders
1 1/2 cups uncooked brown rice
16 oz frozen corn
24 oz. Black Beans Canned
1 cup salsa
44 oz. low sodium chicken broth
1 tsp. sriracha
1 salt and pepper to taste

Recipe Directions for Chicken Tortilla soup

  1. Cook rice in large stock pot.

  2. Chop Onions and Peppers.

  3. Brown chicken tenders in a large skillet with olive oil.

  4. Remove cooked chicken from skillet and set aside.

  5. Saute onions and peppers in skillet.

  6. Drain and rinse the black beans and frozen corn and add to onions and peppers. Add sriracha to vegetable mix according to taste.

  7. Cut or shred chicken tenders.

  8. Add vegetables, broth and chicken to the stock pot with the cooked rice. Let simmer for 10 minutes while stirring. Add salt and pepper to taste, and enjoy!

  9. Option: add shredded cheese to individual bowls.
