Nice hearty chicken tortilla soup with hominy.

Recipe Ingredients for Chicken Tortilla Soup

1 onion, chopped
3 cloves garlic, minced
1 tablespoon olive oil
4 teaspoons chili powder
2 teaspoons cumin
2 teaspoons salt
1/2 teaspoon red chili peppers
2 teaspoon dried oregano
15 ounce diced tomatoes
4 cups water
1 cup corn
2 cup white hominy
4 ounce green chilis
15 ounce black beans
1/4 cup chopped fresh cilantro
2 1/2 c chicken breasts (cup,+chopped+or+diced)
1 tbsp corn starch

Recipe Directions for Chicken Tortilla Soup

  1. In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in chili powder, cumin, salt, oregano, tomatoes, and water. Bring to a boil, and simmer for 5 to 10 minutes.

  2. Stir in corn, hominy, chiles, beans, cilantro, and chicken. Simmer for 10 minutes. Dissolve corn starch in 1/4 c water and add to simmering soup slowly.

  3. Ladle soup into individual serving bowls, and top with crushed tortilla chips, avocado slices, cheese, and/or chopped green onion.
