Garnish with crushed tortilla chips & cheese if desired, but add those items to food log seperately.

Recipe Ingredients for Chicken Tortilla Soup

4 cups chicken broth
2 cups chicken, diced
1 medium onion, chopped
1 bell pepper, chopped
1 jalapeno pepper, minced
1 tsp garlic, minced
14 1/2 oz Tomatoes, Canned, diced
10 oz Tomatoes, Canned, With Green Chilies
1 tbsp lime juice
1/4 cup cilantro, fresh chopped

Recipe Directions for Chicken Tortilla Soup

  1. Boil whole cut up chicken in water with 1 chicken bullion cube.

  2. Remove chicken & retain 4 cups of broth.

  3. Debone & dice chicken.

  4. In large pot, saute onions, peppers & garlic in butter & canola oil. Strain & turn onto paper towel to remove excess oil. Return to pot.

  5. Add chicken, broth, spices & remaining ingredients.

  6. Bring to a boil.

  7. Reduce heat & simmer for 20 minutes.

  8. For faster & tastier, yet more expensive soup, use canned broth or stock & tyson shortcuts southwestern chicken.
