A clone of Houston's famous version

Recipe Ingredients for Chicken Tortilla Soup

4 cups chicken broth
1 lb. boneless skinless chicken breasts
5 medium potatoes, chopped
4 corn tortillas, ground in food processor
3 1/2 cups mild ro*tel tomatoes (1 can)
1 can creamed corn
3 T. cilantro, minced
1 1/2 cups fat-free half and half
8 oz. cheddar cheese, shredded

Recipe Directions for Chicken Tortilla Soup

  1. Cook chicken breasts in broth until tender. Remove and reserve. Add potatoes and ground tortillas to hot broth and cook until potatoes are tender. Then blend stock mixture until smooth. Add rotel, corn, cilantro, cream, and 1/2 of the cheese. Simmer for 15-30 minutes. Add additional salt and seasonings if needed.

  2. Serve with diced avocado, tortilla chips, and sour cream on top.
