I use low or no sodium products as often as possible. You don't HAVE to, but it makes the dish healthier over all. If you use a non-stick stock pot to make this in (highly recommended) you can get by with using less oil to saute your vegetables. Another option, use a bit of the chicken broth mixed with butter buds to saute them in. You can use heart-healthy tortillas, to make the numbers EVEN better.

Recipe Ingredients for Chicken Tortilla Soup

2 tbs. Canola Oil
1 c. chopped onion
4 cloves minced garlic
1 c. chopped bell pepper
1/2 c. chopped celery
1/2 c. diced carrot
2 lbs. boneless, skinless chicken breast, diced
1 tbs. chili seasoning, no salt added
2 1/2 tsp. sea salt
4 oz. canned jalapeno peppers, diced
15 oz. diced tomatoes, no salt added
2 quarts low-sodium chicken broth
2 c. milk
5 corn tortillas (cut into strips)
10 tortilla chips, crushed (optional)
8 oz. shredded low fat cheese (optional)
8 oz. fat free sour cream (optional)

Recipe Directions for Chicken Tortilla Soup

  1. Heat oil in the bottom of a large, non-stick, stock pot. Add onion and garlic, saute for 2-3 minutes before adding other vegetables to the mix. Saute the vegetables until they are translucent. Add chicken breast and cook until just opaque (don't worry, it's going to have plenty of time to cook). Add package of chili seasoning and salt to the mixture in the pot.

  2. Add Tomatoes, peppers (with liquid) and broth to the pot. Add tortillas. Turn the heat down to low/medium low. Simmer soup until corn tortillas have dissolved into the soup. Add milk to the pot to "blush" the soup.

  3. Garnish with remaining ingredients, if desired. Really, you can use anything you would normally use on tacos/enchiladas.
