Delicious on a cool, rainy fall day. Good protein and flavor.

Recipe Ingredients for Chicken Tortilla Soup

2 lbs boneless skinless chicken breast
2 tbs chili powder
1 tbs onion powder
2 tbs cumin
3/20 tsp cayenne pepper
1 1/2 tbs canola oil
1 red bell pepper
1 medium onion
1 jalepeno pepper
4 cloves garlic
20 g g Flame Roasted Green Chile
3 cup rotel tomatoes
8 cups low sodium chicken broth
4 cup Black Beans
250 g g) No Salt Added Golden Sweet Whole Kernel Corn
4 tbs Masa
4 tbs hot water
4 tbs tomato paste
1 tsp salt
7 tortilla+medium+approx+6"+dia corn tortillas

Recipe Directions for Chicken Tortilla Soup

  1. preheat oven to 350 to bake chicken breasts

  2. spray or coat very lightly w/ oil then sprinkle w/ some cayenne, chili powder and garlic powder

  3. bake for 20=25 min and set aside to cool

  4. heat remaining oil in medium to large soup pot

  5. chop onion, peppers, and garlic and saute until soft

  6. add spices and saute for several minutes to fully cook the cumin

  7. while spices are cooking, shred chicken breast and add to the spices and veggies

  8. cook for several more minutes to infuse all the flavors together

  9. add rotel tomatoes, green chiles (I used Hatch green chiles from a can), chicken broth (can use half water and half broth), tomato paste, beans and corn.

  10. stir and let come to a boil, and then simmer for 30 min

  11. add masa to the hot water and stir thoroughly - add to soup and simmer for 30-45 more min.

  12. Salt as needed throughout and to taste at end.

  13. slice tortillas and add to soup before serving- they'll soften nicely as you eat

  14. serve w/ a dollop of light sour cream for an extra 20 calories or add sliced avocado and/or chopped red onion
