Very simple chicken tortilla soup. Served with sour cream and cheddar cheese, if desired.

Recipe Ingredients for Chicken Tortilla Soup - Homemade

8 oz boneless, skinless chicken breasts
30 oz black beans, undrained
30 oz Ro-tel tomatoes, undrained
6 cups chicken broth
1 cup salsa

Recipe Directions for Chicken Tortilla Soup - Homemade

  1. Boil chicken breasts in salted water to create 6 cups broth. (Start with 8 c water).

  2. Remove chicken; shred.

  3. Add two cans black beans, undrained, and two cans Ro-tel tomatoes, undrained. Optional spices: cumin, pepper, cilantro. Stir in salsa (any variety) and shredded chicken. Heat through.
